The Reading Corner: All About Fats

Throughout this past week, I came across several interesting blog posts about healthy fats.  Over the past few years, and particularly in the past couple of months, I’ve switched from using low-fat foods and butter substitutes to using fat in its traditional forms: butter, coconut oil, ghee, lard, and tallow.  During the past month or so on GAPS, I’ve noticed how I feel so much more satiated when including animal fats at every meal.  Lard and tallow are definitely my new friends!

Not too long ago I shared with you how to render your own beef tallow at home using the crockpot.  I recently tried my hand at rending lard basically the same way.  Let me tell you, it’s quite easy to do!

It took me a little while to find a local source of pig fat that I could use.  I finally scored through Black Cat Farm Table Bistro.  They are at the Boulder Farmer’s Market each week and I was able to get 7 pounds from them.  I’m looking forward to the next time they butcher a pig and getting some more so my freezer will be well stocked!
