A Look Back at My First Six Months on GAPS

Yesterday marked six months on GAPS. It’s actually hard to believe it’s been that long already. That first month or so on intro seemed to stretch into eternity at times. And now, looking back, the time has passed quite quickly!

As I shared in my review of my first three months on GAPS, this way of eating is definitely my new normal. While it is definitely challenging still at times, I feel like I have more of a rhythm and routine again as far as meal preparation goes. One of the hardest parts at the beginning of this adventure was not having any go-to meals to rely upon on a regular basis. Everything was so new, it often felt like a struggle to come up with meals each week. While I continue to try a variety of new dishes, it’s comforting to know I have some regulars I can turn to as well.

Celebrating Three Months on GAPS

Last week marked three months on GAPS!  It seems like such a short time and such a long time, all at once.  GAPS is definitely just part of my routine now in so many ways.  During those first few weeks on intro, it seemed like my diet and how I was feeling was constantly changing from day to day.  Maybe that’s because it was!  But now, I feel like I’ve finally hit my new definition of normal. The Reading Corner: All About Fats

Throughout this past week, I came across several interesting blog posts about healthy fats.  Over the past few years, and particularly in the past couple of months, I’ve switched from using low-fat foods and butter substitutes to using fat in its traditional forms: butter, coconut oil, ghee, lard, and tallow.  During the past month or so on GAPS, I’ve noticed how I feel so much more satiated when including animal fats at every meal.  Lard and tallow are definitely my new friends!

Made it to GAPS Intro Stage 5

Raw Veggies!

I’ve now moved on to the 5th stage of GAPS intro.  Only 1 more to go!  Yesterday also marks 1 month on intro for me.  Time is moving right along.

The biggest thing for me on stage 5 has been adding raw vegetables.  So nice to have food that crunches!  It also means a much wider variety of foods and textures for meal times.  I’ve been enjoying salads over the past few days.  That was something I’ve really missed this past month, especially with it being summer and so many fresh veggies to choose from! A Little Background

I thought it would be helpful to share a little bit of my background and the reasons that I’m making this big change in my life.

For most of my childhood and teen years, I was fairly healthy, but tended to get sick quite easily.  I kept active, though, and was a competitive baton twirler.  I was diagnosed with asthma as a child, but it was fairly mild and went away in high school.  After my first year in college, I started having trouble with asthma again.  I went and saw an allergist and had a skin scratch test done.  Not too much came up on it from the environment.  Dairy was mentioned, but the allergist just mildly suggested I might want to remove it from my diet and see what happened.  I was thinking that there was no way I was going to do that!
