So, you’re going to notice something quite different for this week’s plan. Umm…there was no meal plan made!
I know, I know. Not really a great way to keep emptying my freezer and pantry out, now is it? Unfortunately, the last few days ended up being a bit busy. And, to be honest, I was not super motivated for meal planning. I thought about going back and filling in what I did make, but thought I would let you see what happens in reality in my household.
Consistent meal-planning is not my strong suit, but I am trying to be better at doing it regularly. So even though I missed this last week, I’m just going to keep going along with the challenge and will have a new meal plan for the next week.
A Little More Room in My Freezer
I will share with you, though, a few of the things I used up over this past week. I think it has helped to have a mindset of using up what I have, even when I neglected my meal plan for the past week.
First up, I finally made the Pumpkin Spice Bread recipe I had planned on making last week, which used up some frozen pumpkin puree and some coconut flour. The bread was really delicious. I would share a picture with you, but the portion I kept out has all been eaten rather quickly. I froze most of it in small batches to pull out as we want them.
I also pulled out some pork chops and made those with an easy honey mustard glaze. To make the glaze, just mix an equal amount of honey and mustard on the stovetop over low heat. Yum!
Today I’m making a variation of my Spaghetti Squash with Meat Sauce recipe. I decided to use up some of my shredded summer squash that I froze from last year. I’ve heard that’s a great way to serve a meat sauce. I’m also using a pound of Italian sausage I had stocked away.
I’ve got a chicken defrosting right now for dinner tomorrow night. I’m planning on making the chicken curry recipe I discovered when I was doing my Virgin Coconut Oil review. (By the way, there’s still time to enter my Coconut Oil Giveaway. It ends at midnight EST on 6/5!)
My freezer is continuing to empty out, even though my menu planning skills were a bit lacking this week. My goal will be to have a nicely laid out menu plan for next week. It will be even more important since I will have just picked up my first share of my veggie CSA on Wednesday and another monthly installment of my chicken CSA.
