Meal Planning Challenge Week 1: Why I Joined

Keeper of the Home is hosting a 6-week meal planning challenge starting today.  I was interested in the challenge when Stephanie first posted about it.  However, with feeling a bit overwhelmed lately, I wasn’t sure how much I wanted to commit to it.  I tend to have an on again/off again relationship with meal planning.  I’ll go for a few weeks doing great at meal planning, and then just not get around to it for a while again.

I decided this morning as I was reading her post and realizing my menu plan was blank for this coming week, to go ahead and join the challenge.  I think I spend less on groceries and feel less stressed overall when I have a plan for the coming week.  So each Monday for the next 6 weeks, I’ll be posting my weekly menu.

When I do my actual meal planning, I write it down on a paper menu that I keep on my fridge.  I’ll just be typing it up on here once I’ve done that.  Also, check back later this week and I’ll be doing a post about how I use Evernote to help me keep track of all the delicious recipes I find online that I want to try.

Your meals for the week sound good especially the spiced apple muffin. I am going to make these, soon. I, too, read the challenge at Keeper of the Home but I don’t have a blog.

Now I’m looking forward to your Evernote post….my mom is always raving about it but I’ve never understood how it works.
