Meal Planning Challenge Week 1: Why I Joined

Keeper of the Home is hosting a 6-week meal planning challenge starting today.  I was interested in the challenge when Stephanie first posted about it.  However, with feeling a bit overwhelmed lately, I wasn’t sure how much I wanted to commit to it.  I tend to have an on again/off again relationship with meal planning.  I’ll go for a few weeks doing great at meal planning, and then just not get around to it for a while again.

I decided this morning as I was reading her post and realizing my menu plan was blank for this coming week, to go ahead and join the challenge.  I think I spend less on groceries and feel less stressed overall when I have a plan for the coming week.  So each Monday for the next 6 weeks, I’ll be posting my weekly menu.

When I do my actual meal planning, I write it down on a paper menu that I keep on my fridge.  I’ll just be typing it up on here once I’ve done that.  Also, check back later this week and I’ll be doing a post about how I use Evernote to help me keep track of all the delicious recipes I find online that I want to try.

September 25 – October 1, 2011 Menu
Sunday, 9/25
B-Bacon & fried eggs with sautéed veggies
D-Chicken salad (take to pot luck)
Prep-Chicken stock
Monday, 9/26
B-Bacon & fried eggs with sautéed veggies
L-Leftover chicken salad
D-Leftover green chicken chile w/kale
Prep- Defrost sausage, muffins, & chicken; chicken stock, jello, & pancakes
Tuesday, 9/27
B-Sausage patties & eggs with spiced apple muffin
L-Leftover chicken salad
D-Paleo Chicken “Noodle” Soup & Salad (I’ll be doing a variation of the soup recipe.)
Prep-Tuna salad, macaroons, vanilla kefir ice cream (or maybe this version without the chocolate)
Wednesday, 9/28
B-Sausage patties & eggs with spiced apple muffin
L-Tuna salad
D-Meal service – I’m trying this out for the first time.  I’ll let you know how it goes!
Thursday, 9/29
B-Kefir smoothie (make double batch), sausage & eggs
L-Tuna salad
D-Leftovers, bring macaroons to evening meeting
Prep-Chop & sauté veggies, coconut flour bread
Friday, 9/30
B-Leftover kefir smoothie, bacon & eggs w/veggies
L-Tuna salad
D-Honey Glazed Chicken Legs, veggies (TBD), butternut squash soup
Saturday, 10/1
B-Bacon, eggs, & veggies
Prep-Kitchen Sabbath!
